Holy F#@ck Triple Chocolate Cake with Chocolate Raspberry Rum Agave Icing (Gluten free!)

Ok, this cake is guaranteed to send health nuts and vegans scurrying for the hills! But, ya know, sometimes in life we have to say “oh the hell with it” and enjoy something absolutely decadent. This cake and icing is an easy-to-make, mouthgasm-inducing exquisite treat that will bowl over the chocolate lovers (and gluten allergy victims) in your life!

Cake Ingredients:

– 2 oz dark or semisweet chocolate (almost a whole candy bar is what I used)

– 1 cup unsalted butter

– 1 1/2 cup sugar

– 1 cup cocoa powder

– 6 eggs. beaten

– 2 tsp vanilla extract

Cake Directions:

– Preheat oven to 300

– Melt butter and chocolate together (over double-boiler works best)

– Stir together dry ingredients in large mixing bowl

– Combine dry ingredients with chocolate/butter mixture and whisk together well

– Pour mixture into greased cake pan

– Bake 40 minutes at 300 (may need to bake more, cake is done when toothpick inserted in the middle comes out clean)

– Let cake cool in pan then carefully transfer cake to cooling rack (I made a make-shift cooling rack out of the wire rack from my toaster oven and two tuna cans)

Icing Ingredients

– 1/2 lb semisweet chocolate chips

– 2/3 cup sour cream

– 4 tbsp seedless raspberry jam

– 2 tbsp agave nectar

– 1 tbsp spiced rum (more or less to taste)

– 1 tsp vanilla extract

– 1.5 tbsp unsalted butter

Icing Directions:

– Melt butter and chocolate, just like with cake

– Combine all ingredients into a large mixing bowl and beat on low with an electric mixer until smooth

– Allow icing to cool in fridge for up to two hours then ice cake!

Turtles in a Pie Tin! Turtle Power!

So, this has nothing to do with anything, really, but…

I’m kind of obsessed with the Teenage Mutant Ninja Turtles.  I’m only 24, so in my childhood heyday, TMNT were my little kid drug of choice.  Seriously, toys can be like crack for little kids!  I just WANTED MORE!!! AHH!!!

As I mentioned before, I was raised in a low-income family, so I didn’t get much.  I did manage to have all the Ninja Turtles, a few bad guys, and their turtle van!  That shit rocked my world!  I of course also had turtle shirts, jammies, and a comforter that I still sleep with (which really creeps my girlfriend out but I don’t care).

As an adult, I’ve started collecting TMNT stuff.  I have all the original toys still in boxes.  I have a deck of cards, some colorforms, and a few figures from special editions, like the baseball one and the one where they could form back into regular turtles.  I also have a real pet turtle named Ferdinand, and most of my friends call me turtle.  Is this getting weird yet?

It’s about to get weirder!  😀

One of my friends who calls me turtle is dating this really silly guy named Jon.  When he found out I was into the Teenage Mutant Ninja Turtles, he just thought that was awesome because he used to be too and still has all the toys.  So we started joking around that we were going to get together for a play date.  Well… we actually scheduled it.  Tonight is officially “turtle time” and Jon and Bird Boobs (my nickname for my friend), my other friend Gina and her boyfriend, and another couple are going over to Jon’s to eat pizza and watch turtle cartoons and play with turtles.

Ridiculous, yes.  Fun, double yes.

So anyway, in preperation for turtle time, I baked two ninja turtle cakes yesterday.  I promise that my recipes will be much more complex and far less ridiculous than this, but I just had to include it.

I just used regular cake batter from a box (I’m really not that into baking at all, just cooking), and I baked the cake into two pie tins.  I flipped them over onto plates and frosted them with regular frosting that I colored with food coloring.  I would’ve liked to have added more details (uh, like mouths… lol) but I ran out of frosting and made a firm decision that I didn’t feel like walking to the grocery store.

Ouila!
