Hey all! I’m a barista at a cafe in Philly called Cake and the Beanstalk. It’s a really cute dessert/coffee shop where all the desserts are handmade from scratch on the premises.We also serve locally-roasted coffee, Chestnut Hill, and local tea, Remedy. We have vegetarian paninis too!

It’s located on Locust Street between 11th and 12th. Stop in sometime!

If you think that you can’t cook a huge, delicious vegetarian meal, you’re wrong! I did Thanksgiving this year at my place and had an amazing veggie feast.  Vegan wheatloaf*, beer-infused cranberry sauce, vegetarian stuffing*, balsamic green beans, mashed potatoes, candied yams and pumpkin ravioli were all part of the mouth-watering meal that left us all stuffed, sleepy and full of warm fuzzy feelings — without the extra pounds. Well, maybe a pound or two, but not 15!

Hello!  Long time no post!  Just when you thought The Cows Will Thank You was one of my many side projects that got lost in the shuffle of my many fleeting bouts of ambitiousness, I’m back to say oh no!  Fear not!  The Cows Will Thank You is back with a vegetarian vengeance!

I actually have a really good excuse for not writing.  My dad had a massive heart attack and was dead, then revived, then dead again, then revived again, then stayed revived and is now OK.  Simultaneously my stepdad George had a small stroke.  So I was away dealing with intense life stuff, then I was away again at my Aunt’s wedding, and now I’m finally back in the kitchen where I belong!

So more recipes to come…. enjoy!  The cows (and I) will thank you for reading!

Turtles in a Pie Tin! Turtle Power!

So, this has nothing to do with anything, really, but…

I’m kind of obsessed with the Teenage Mutant Ninja Turtles.  I’m only 24, so in my childhood heyday, TMNT were my little kid drug of choice.  Seriously, toys can be like crack for little kids!  I just WANTED MORE!!! AHH!!!

As I mentioned before, I was raised in a low-income family, so I didn’t get much.  I did manage to have all the Ninja Turtles, a few bad guys, and their turtle van!  That shit rocked my world!  I of course also had turtle shirts, jammies, and a comforter that I still sleep with (which really creeps my girlfriend out but I don’t care). 

As an adult, I’ve started collecting TMNT stuff.  I have all the original toys still in boxes.  I have a deck of cards, some colorforms, and a few figures from special editions, like the baseball one and the one where they could form back into regular turtles.  I also have a real pet turtle named Ferdinand, and most of my friends call me turtle.  Is this getting weird yet?

It’s about to get weirder!  😀

One of my friends who calls me turtle is dating this really silly guy named Jon.  When he found out I was into the Teenage Mutant Ninja Turtles, he just thought that was awesome because he used to be too and still has all the toys.  So we started joking around that we were going to get together for a play date.  Well… we actually scheduled it.  Tonight is officially “turtle time” and Jon and Bird Boobs (my nickname for my friend), my other friend Gina and her boyfriend, and another couple are going over to Jon’s to eat pizza and watch turtle cartoons and play with turtles.

Ridiculous, yes.  Fun, double yes.

So anyway, in preperation for turtle time, I baked two ninja turtle cakes yesterday.  I promise that my recipes will be much more complex and far less ridiculous than this, but I just had to include it.

I just used regular cake batter from a box (I’m really not that into baking at all, just cooking), and I baked the cake into two pie tins.  I flipped them over onto plates and frosted them with regular frosting that I colored with food coloring.  I would’ve liked to have added more details (uh, like mouths… lol) but I ran out of frosting and made a firm decision that I didn’t feel like walking to the grocery store.

I think it’s important to start off this blog with a photo of my kitchen.  My girlfriend and I moved in February, and this is the biggest kitchen I’ve ever had while I’ve lived in Philadelphia (for about 6 years now).  I LOVE THIS KITCHEN!!

It’s got a dishwasher, a garbage disposal, a convection top stove, an oven so big you could cook a small child in it (I have an occasional sick sense of humor, just so you know), tons of cabinet space.  It’s amazing!

My sister has had a dishwasher and for a long time she was like “Dudeee, get a dishwasher man!  It’ll change your lifeee!”  (Stoner voice.)  I never quite understood what she meant, until now.  The dishwasher rocks my effing world.  I used to HATE doing dishes, and now, I just rinse them off and put them into a little box and they come out clean!  Ouila!  Amazing!

Welcome to The Cows Will Thank You.  This is my food blog where I will share my adventures in vegetarian (and sometimes vegan) cooking.  I started cooking only vegetarian at home about a year ago, and I love it!  My girlfriend and I made the decision together for political and animal rights reasons, and since I spent 23 years of my life eating meat… I still eat some occasionally when I’m out.  Like when I had bacon last weekend…

But I only cook vegetarian at home, and I’m pretty poor, so I don’t eat out a whole lot.  I am so glad I’ve chosen to cook this way.  When I was only eating meat, the dishes I made at home were pretty limited.  I would make some kind of meat, a vegetable and a simple side — nearly every day.  The typical American meal!  When I decided to go veg, I had never been exposed to vegetarian eating, so I was like uhhh…. what do I do now?!?!

In the beginning, we ate a lot of pasta and other crap.  But recently I’ve discovered a whole world of Asian and Middle Eastern cooking that I thought was untouchable before.  I’ve also discovered some amazingly tasty American dishes that are surprisingly similar to meat, much healthier, and nobody had to die for it to be on my plate!  Yayyyy.

When I was younger, I used to hate to cook.  Although my mom did an amazing job raising me with limited income, and there was a hot meal in front of my face every day of the week, for which I’m eternally grateful, cooking just always seemed like another chore.  I love being challenged and learning new things, and I’m not afraid of failing, so now cooking, for me, encompasses all of that!  I’m trying to cook with many new ingredients and styles, many of which I’ve never even tasted before.  Most importantly I’m nourishing myself and my girlfriend and occasionally friends and family with delicious food that is good for their bodies and minds.  And to be honest, I’m shopping at markets and at Asian and Indian supermarkets, and I’m spending less on groceries than ever!

 I’m not vegan (yet?), but sometimes my meals are vegan — or could be easily made vegan, so I’ll be sure to note that.  Other than that, I hope you enjoy my ramblings and get some good recipes!  If you’re new to the vegetarian thing, don’t sweat it — you’ll figure it out and it will change your life!  I’ll also try to include as many photos and videos as I can for all ya’ll visual learners out there.
